There are also graphs and examples of experiments and trials for readers to reference, as well as a glossary of terms for more scientific terminology and an extensive reading list for further research. The book also includes exclusive photography and cocktail recipes from the Crossroads team.

I bought this book becuase i wanted to learn more about carbonation. And I got exactly this. Very detailed info on the science of carbonation but in a very understanding way. Easily understood and practical. Totally recommended read
11/10, highly recommend! This book is exhaustively written and it really gives this whole 'Dave Arnold-style' educational & experiment depth where you feel as though you're riding along in some of the experiments as youre learning about each particular sub topic. Im a marketer in F&B, mostly graphic and photo / video so my liking of the book may be different from most coming with bar experience, but I was able to read through it in 1-2 days. It is organized well so its easy to quickly go back and reference anything needed... by day 3, I was making my first trials and the recipes included are great templates and some are particularly involved in the culinary sense (which I loved – and would recommend getting a centrifuge if youre wanting to get more serious in the batching of culinary style mixes)... I've made 3 of them so far: Rose, Cairo, & Pear and they are super great learning experiments to start with. Also if you're not able to buy Supasawa (I cannot get it in Hawaii) you'll need a recipe on that – I've just been using an 6% acid water mix and Im not sure if its the same. Some of the recipes are handwritten with characters that are hard to read ("1" looks like "^", and decimals are sometimes microscopic) so be careful or write them down first, I've messed up a couple batches going right off of the book. But I absolutely love this book, the layout is clean and contents are super deep.
